Ingredients for 6 people:
12 slices of bresaola
12 loafs of bread
150 gr Don Carlo cheese
200 gr Radicchio di Treviso
5 spoons of extra virgin olive oil
3 spoons of grapefruit juice
salt and freshly ground pepper
For the vinagrette, pour oil, grapefruit, salt and pepper in a bowl and emulsify well.
With a stamp, cut out from the slices of bread 12 stars.
Grate Don Carlo cheese and store it away; then brush slightly the stars of bread with the vinagrette prepared and spread with grated Don Carlo, keeping back a little.
Clean, wash and cut in pieces the radicchio of Treviso, which will be put on the stars.
Create a rose with the slices of Bresaola and lay it on the radicchio; put in the centre of the rose some other piece of radicchio, dust with the left-over cheese and put a little vinagrette, then serve.
