This cheese not only represents a flavour experience but also a journey, the tale of a fusion stemming from Antonio Carpenedo’s creative talent, resulting in another of his creations, the Dolomitico®. It was the summer of 1997, a day out in the mountains so dear to his heart. By chance, as happens so often in life, Antonio met a master brewer on the slopes of the Dolomites who caught his interest. Through the brewer’s passion, he was brought closer to a world largely unknown to him: beer. Beer created with passion, marrying local ingredients such as barley and the mountain water. It is nature which imposes the time needed for the fermentation process. Patience, the ability to wait for the right moment. He saw himself in the way that flavours can be imagined and decided to bring the emotions of that encounter into his cheese. And this was the start of an adventure of experimentation, patiently waiting for the result of so many trials before the day when he would taste the perfect Dolomitico®, aged with care, transformed with the unique beer, protagonist of that casual encounter, igniting the imagination.
