Back in 1980 Antonio Carpenedo started his quest to create a truffle cheese which was different to those already around. Often, inspiration comes when you least expect it. An evening with Giorgio, a long-time colleague and friend of Antonio provided the perfect occasion for Truffl e! Giorgio, connoisseur of Italy and its fine products, came up with the combination of words for the name! All Antonio had to do now was to start thinking and experimenting. The result is an extraordinary success, enriched by a massage of spices and the touch of ash. Yes! This extraordinary example of creativity ends up beneath ash to preserve and enhance its aromas.
