Back in 1980 Antonio Carpenedo started his quest to create a truffle cheese which was different to those already around. Often, inspiration comes when you are least expecting it. An evening with Giorgio, a long-time colleague and friend of Antonio, provided the perfect excuse for Truffle! Giorgio, connoisseur of Italy and its fine products, came up with the combination of words for the name! All Antonio had to do now was to start thinking and experimenting. The result is an extraordinary success, enriched by spices massaged into the rind.
