Bresaola rose with Don Carlo cheese and grapefruit vinaigrette

Ingredients for 6 people

12 slices bresaola

12 slices pan carrè bread

150 g Don Carlo cheese

200 g Radicchio Rosso di Treviso

5 tablespoons extra virgin olive oil 

3 teaspoons grapefruit juice 

freshly milled salt and pepper 

Difficulty level: Easy


For the vinaigrette, put the oil, grapefruit juice, salt and pepper in a bowl and mix thoroughly. 

Using a stencil, cut out 12 stars from the slices of pan carrè bread.

Grate the Don Carlo and put it to one side. Brush the bread stars with the prepared vinaigrette and sprinkle them with grated Don Carlo, keeping some aside. 

 Peel and wash the Radicchio Rosso di Treviso. Cut into small pieces and place on the stars.

 Arrange the bresaola slices into a rose and place on top of the radicchio. Add a few more pieces of radicchio at the heart of the rose, sprinkle the remaining cheese, add a drizzle of vinaigrette, and serve.
